Château du Grand Caumont
On the soil of Corbières, the cultivation of the vine, major in the region, dates back to the 2nd century BC and has developed since Roman times. Located in the heart of the Corbières on the terroir of Lézignan Corbières, the Château du Grand Caumont is one of the largest estates in the appellation with 105 hectares of vines on 150 hectares of land and scrubland.
We cultivate and mature with passion and a great concern for the preservation of the environment of beautiful aromatic and warm cuvées.
At Château du Grand Caumont, the harvest takes place between the end of August and the beginning of October over a period of about a month and a half.
We will taste the grapes from each plot in the vineyards until the maturity is ideal, the degree sufficient, the grapes fully ripe, bursting with sunshine and sugar.
We first harvest the white grape varieties, Grenache blanc and Vermentino, then the rosé, Cinsault and Grenache. For the greatest preservation of the aromas, these plots are harvested from midnight to six in the morning to benefit from the coolness of the night.
Then follow the different red grape varieties, Merlot, Cabernet, then Syrah, Grenache noir, old vines of Carignan harvested by hand by the same team for more than fifteen years.
Then begins the decisive period in the quality chain of our cuvées.
